Easy, Healthy Bunny Carrot Cake Recipe

This yummy recipe can be used as an Easter treat!  You could ice it with a cream cheese frosting too!  It can also be made as muffins or a whole cake.  Here, we have used the Bunny Snackie to make a mini Easter Bunny cake.

 

INGREDIENTS

  • 2 cups whole meal flour
  • 2 teaspoons baking soda 
  • 2 teaspoons cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup coconut sugar
  • 1 cup coconut oil
  • 3 eggs
  • 2 cups grated carrot
  • 1 apple, peeled & grated
  • 1/2 cup sultanas

 

METHOD

  • Preheat oven to 180C
  • Mix flour, baking soda, cinnamon & salt in a bowl
  • In a separate bowl mix sugar, oil & eggs
  • Add wet to dry and mix until combined
  • Fold in carrot, apple & sultanas
  • Divide mixture into bunny snackie (plus it will also make about 8 muffins)
  • Bake 18mins for muffins, 28mins for Snackie (or until a toothpick comes out clean)

 

Yum!  With all the chocolate around at Easter, and for weeks after, it's nice to have something a little healthier on hand that stills feels just as fun for Easter.
