[Recipe]: Raw Chocolate Coconut Slice

Chocoholics rejoice!  I have something you’re going to love… This recipe was inspired by a number of recipes I found on Pinterest.  And it’s amazing.  What’s not to love about chocolate and coconut together – oh, and it’s a healthy version, and I love that!

The original ratios are below; I doubled them to make a slice about 20cm x 14cm with a bit of chocolate left over.

Here’s the recipe… enjoy!

Coconut layer:

  • 2 cups desiccated coconut
  • 4 tablespoons maple syrup
  • 5 tablespoons coconut oil
  • 1 teaspoon vanilla

Raw Chocolate layer:

  • ½ cup coconut oil, melted
  • 6 tablespoons raw cacao powder
  • 4 tablespoons maple syrup
  • 1 pinch of salt

 

Instructions:

  1. Line your container of choice with baking paper.
  2. In a bowl, mix all the ingredients of the coconut layer together until well combined.
  3. Press into the container – make sure you press down quite firmly so it packs together well.
  4. Place in the freezer to harden while preparing the chocolate layer.
  5. Add all of the chocolate layer ingredients into a bowl and mix to combine.
  6. Pour over the coconut layer to desired thickness, cover, and place the container in the freezer to harden.
  7. Once solid (an hour or so should do), take it out and chop it up!
  8. Store in the freezer so the coconut oil doesn’t melt.

 

This is a deliciously decadent dessert or treat, and because it’s packed full of good fats from the coconut oil and antioxidants from the cacao, you don’t need much of it to be satisfied.

The chocolate recipe can also be used to make any raw chocolate treats – I put some in the bottom of a silicon muffin cup, topped with goji berries, but you could also make chocolate bark from it.
